Carmona My daughter and I made these last week, and they’re too good not to share. My mom used to make these ever since I was a kid, and it’s one of those cookies that it just doesn’t feel like Christmas until I make them. Oh MAN, are they good! I usually have to make up a batch and then pawn half of them off on a friend or bring half of them to my office, because if they’re sitting in my fridge I’m tempted to stuff my face a dozen times a day. They’re THAT good.

• 1 cup peanut butter (I like using chunky, but you can use smooth too)
• 1/4 cup softened butter
• 2 cups graham cracker crumbs
• 2 packages of chocolate chips
Combine the frosting, peanut butter and butter with a fork until everything is blended together. Then add the graham cracker crumbs. Roll the mixture into one inch balls. Place them on cookie sheets, and let them chill in the fridge for at least one hour.
Melt the chocolate chips in the microwave for 60 seconds, then stir. Dip each ball into the chocolate mixture. I like to scoop them up with a fork so that the excess chocolate drips through the tines and goes back into the bowl. Place each chocolate covered ball back on the cookie sheet, and let the chocolate set until it’s hard.
*These are best kept refrigerated if you don’t plan on eating them right away, because the chocolate coating will get melty and messy if kept at room temperature for too long. But it you’re putting them out at a party they’ll disappear pretty quickly, and you won’t need to worry about that!
The thing I really like about this recipe is that, even though it’s simple, there really is a lot you can do to customize it. For example, you could use chocolate graham crackers instead of regular ones. You could dip them in white chocolate instead of regular chocolate (on year I dipped them half in one and half in the other). You could use chocolate frosting instead of vanilla frosting. You MIGHT even be able to use Nutella instead of peanut butter (I’ve never tried it myself, but I bet it would work)
I’m kind of traditionalist, and love them just the way they are. 🙂
